EASY FRESH PASTA SHAPES @ HOME

Read more Dough for 4 portions: 200g 00/plain flour and 200g semolina flour 100ml warm water and 2 egg yolks OR 160ml luke warm water (vegan) 1tsp salt Put the flours in a large bowl, make a well in the centre add in egg yolks (or not if your vegan), half of the water and salt mix with a spoon adding the remaining water little at a time, you may need more warm water depending on the size of your yolks/density of your flour but add it a tbsp at a time until it starts to form a hard dough. Turn the dough out onto a clean surface and kneed for around 10 min until smooth. Cover with cling film/damp cloth and leave at room temp for 30 min before shaping. Make sure you scatter your pasta shapes across a lightly floured tray to dry them out slightly before boiling in salty water for 3 min or until they bop to the surface.
